ASHWAUBENON (NBC 26) — Sunday was the first day bars and restaurants across Wisconsin were able to sell cocktails under a new bill signed by Governor Evers.

“I certainly expect it would help other restaurants have an additional revenue stream which all of that industry needs right now. Ways to try and help get back healthy to a business level that is able to sustain,” said Rob Czypinski, Hinterland Brewery Operations Manager.

For Hinterland Brewery in Titletown, the operations manager said they’re hopeful this will help bring another opportunity for their business.

“It extends another opportunity for us to bring the Hinterland experience outside of the building which is great. Obviously through the whole pandemic we extended our take out and curbside business with some other opportunities there,” Czypinski said.

While the pandemic was a huge impact for many in the restaurant business, Czypinski says he’s hopeful this will help bring more revenue for other bars and restaurants as well.

“I certainly expect it would help other restaurants have an additional revenue stream which all of that industry needs right now. Ways to try and help get back healthy to a business level that is able to sustain,” Cypinski said. “Obviously our facility is large. We’re fortunate that even seating at half capacity and keeping people at a safe distance from one another we’re still able to seat a lot of people in our building. Not all places have that ability, that luxury so hopefully this will help the industry another way to strengthen their bottom line”.

He says right now Hinterland Brewery has a few new drinks they’ll be rolling out soon, something that might have more people coming in and placing their orders to go.

“We actually are just transitioning to a spring cocktail menu this coming week so it’s good timing for us. We’ve got a new spring mule that we are doing that will have some lighter flavors to it,” Czypinksi said.

The drinks to go can only be sold for pickup and not delivery.

Drinks must also be packaged in a sealed, a tamper-evident container

The bill won bipartisan approval in the Legislature.
