Sautéed Opakapaka With Green Tea Soba Noodle Salad
1 6oz portion opakapaka seasoned with fresh sea salt and fresh black
pepper
saute using grapeseed oil.
Soba Noodle Salad:
Green tea soba noodles cooked off and cooled
1 scallion bias cut
¼ sweet red pepper brunoise cut
Toss with red chili vinaigrette
Red Chili Vinaigrette:
1 tablespoon rice wine vinegar
½ teaspoon chopped garlic
½ teaspoon hot red chili flakes
1 tablespoon salad oil
1 tablespoon sesame oil
Pinch fresh grated ginger
Salt to taste
