Seared Halibut Over Rice Pilaf

Have Your Own Fish Fry from 1951 West

2 – 8oz Fresh Halibut Fillets

¼ Teaspoon Black Pepper
¼ Teaspoons Kosher Salt
¼ Teaspoon Thyme
¼ Teaspoon Rough Ground Rosemary
½ Cup White Rice
1 Cup Water
¼ Cup Olive Oil

In small mixing bowl, add pepper, salt, thyme, rosemary and mix until fully incorporated.  In sauce pan, heat water to boil, add rice and simmer.

In Saute Pan, heat olive oil over medium heat for about 1 ½ minutes.  Dust halibut with seasoning mixture.  

Place in saute pan and cook until fluids from fish run clear.  You will want to flip fish a couple of times as not to burn.
