fillets Salmon
Seasonings:
1 – Tbsp
cumin
1 – Tbsp Chili Powder
1 – Tbsp Garlic Salt
Red Pepper
Coulis:
3
Red Peppers
½ Onion – diced
½ tsp white pepper
½ tsp Old Bay seasoning
1 cup water
Pace water pepper and onion and bring to boil.
Once onion are translucent, put in food processor w/ seasonings
and puree.
Salsa:
4 –
tomatoes seeded and diced
½ - onion diced
1 – jalapeno minced
1 tbsp – minced garlic
½ - cucumber seeded and diced
½ bunch cilantro chopped
1 tbsp cumin
1 tbsp sugar
¼ cup – rice wine vinegar
2 tsp garlic salt
Mix all ingredients together
Season Salmon:
Place on pan w/ water
to cover bottom of pan. Place in 375-degree oven for 20 min.
Heat coulis. Place on plate. Put salmon on coulis. Top salmon w/ salsa.
